Introduction

Adapted from recipe at the PPK. These are the best vegan pancakes I've ever found. I made them a little healthier and lower in fat by replacing oil with applesauce and adding whole wheat flour, flax seeds and fruit. Adapted from recipe at the PPK. Ingredients

    1 1/3 cups flour (3/4 cup white whole wheat and the rest all-purpose unbleached white flour)
    2 tsp baking powder
    1/4 tsp salt
    2 tsp natural sugar
    2 tbsp ground flax seed
    1 cup vanilla soy milk
    1 tbsp unsweetened applesauce
    1/3 cup carbonated water (or more to desired consistency)
    1 banana, thinly sliced (or blueberries)

Directions

Mix dry ingredients (first 5) and liquid ingredients (everything else except fruit) separately. Then combine and stir until just mixed. Add fruit and stir until just mixed. Don't over mix. Cook pancakes in a frying pan lightly coated in cooking spray.

I usually serve with applesauce and a little maple syrup (not included in nutritional info).
