Ingredients

1 lb Extra Lean Ground Beef
1 - 16oz Can of V8 Tomato Juice
1 - 10oz bag of mixed vegatables (corn,peas,green
beans, carrots, lima beans) - or your favorites
1-1/2 cups peeled potato, cubed (omit for lower carb intake)
1-1/3 cups Whole Wheat Elbows uncooked (omit for
lower carb intake)
1 pkg McKormicks Slow Cooker Veg Soup Seasoning Mix
2 cups Water
Directions
1. Cook lean ground beef - season to taste. I like to roll
into very small meatballs. Drain.
2. Add cooked beef, mixed vegatables, cubed potato, and
uncooked elbows to Slow Cooker.
3. Mix Seasoning with water until well blended. Pour over
ingredients.
4. Add V8 Juice
5. Slow cook for 4 hours on High or 8 hours on low.
You can also make this on the stovetop in approximately 1.5 hours- but it's tastier slow cooked!
