My grandma Stella taught me this recipe.

Ingredients

short wooden skewers (5.5 inch candy apple sticks?)
1 lb pork, white meat cut in cubes
1 lb beef, stew meat, steak or roast cut in cubes
2 eggs
1/2 cup 2% milk (1/4 cup is used for calorie count)
1cup flour (.5 cup is used for calorie count)
1 cup (1 sleeve) finely crushed saltine crackers (1/2 cup in cal. count)
1/3 teaspoon pepper
Optional (NOT in calorie count):
Dash salt
Canola oil, enough to pan fry
Directions
All ingredient amounts are estimates!

In one bowl beat together milk and eggs.
In a 2nd bowl place crushed crackers (cracker meal- start with 1/2 cup and add more as needed so you can save the extra).
In a 3rd bowl place flour and just enough pepper that you can see it speckled throughout when it is mixed. Salt optional.
Skewer the meat on sticks alternating beef & pork.
Dip each skewer in this order
1. Egg mixture
2. Cracker meal
3. Egg again
4. Flour mix
NO FRY: You may skip the frying part and only bake these in the oven to reduce calories from oil. If only baking: bake uncovered as you would breaded pork chops until browned, then cover and bake until tender if necessary.
TRADITIONAL: Fry the city chicken to brown. Place city chicken in a roasting pan or covered casserole pan. You can stack them on each other if you need to. Cover and bake at 350 degrees until beef and pork are very tender, about 40 minutes to 1 hour.
This is the same method Grandma used to make fried chicken as well.
If you fry remember to add calories for oil.
