Introduction
Inspired by one of my favorite recipes at Green Lite Bites (www.greenlitebites.com), I went with beef and rice instead of chicken and noodles. Ingredients

8 oz. 93% lean ground beef
Box beef-flavored Rice-a-Roni, lower sodium
1 cup salsa
1 can green beans
1 cup canned corn
1 1/2 cups water
Directions
Brown ground beef in a big skillet. Add rice, brown according to package directions. Add water, salsa and seasoning packet. Cook (according to package) for about 15 minutes, then add beans and corn. Heat through.
Makes 4 servings (I divided the contents of the pan into quarters).
