Introduction

Madras Curry Sauce, hot. Madras Curry Sauce, hot.
Number of Servings: 8

Ingredients

    2 Tablespoons Canola Oil
    1 Onion finely Chopped
    1 tsp ginger powder
    2 small cans which is 8oz total of green Chillies or 3 fresh deseeded.
    1/2 tsp turmeric powder
    1-1/2 tsp cumin powder
    1-1/2 tsp coriander
    1 tsp salt
    1/2 tsp chili powder
    1/2 tsp red pepper
    2 cups of water

Directions

Brown the onions and garlic in oil then simmer with the rest of the ingredients about an hour.

I add a few salad shrimp to this sauce and serve over rice. It's good if you like Hot Food which I do.

It makes 4 cups of sauce and I use 1/2 cup of sauce for a serving

If you don't like really really hot food, use less red pepper and chili powder
