Introduction

Ingredients

    1 large apple, peeled, cored and chopped
    1 half roasted winter squash (I estimated it being 2 cups) seeds and skin removed, and chopped
    1 large carrot, peeled and chopped
    .5 medium onion, chopped

    I use 4 cups of water and 1 of those large Knorr veggie bouillon cubes, or you can use two cups veggie broth and 2 cups water.

    Pepper to taste

Directions

Boil broth and water together, add everything except pepper. Boil for 30 minutes.

Blend with immersion blender, or transfer to standing blender, and puree.

Season with pepper.

Makes approx 4, 1 cup side servings, or 2, 2 cup dinner portions.
