Introduction

Ingredients

    1 whole chicken, boiled or roasted, then shredded (could also use chicken breast or thighs/legs)
    Mahatma's Yellow Rice, 10 oz pkg
    1/2 bag of frozen peas
    1/2 medium sweet onion, diced

Directions

Boil or roast whole chicken. Let chicken cool & then shred.

Preheat oven to 350.

Cook rice following package directions. Dice onion. In large bowl mix together rice, peas & onion. Mix shredded chicken in with rice mixture & pat into casserole dish. Let bake in oven for 20-30 minutes, until onions have softened.

If you have more than you want for one serving you can freeze extra in casserole dish covered with plastic wrap & then lid.

** This recipe would also be great with frozen broccoli, green beans or snow peas.
