* Sweet potato, cooked, baked in skin, without salt, 2 large (remove)
* Egg, fresh, 3 large (remove)
* Vanilla Extract, 1 tsp (remove)
* Granulated Sugar, .75 cup (remove)
* *Flour, white, 2.25 cup (remove)
* Salt, 1 tsp (remove)
* Baking Powder, 4 tsp (remove)
* Banana, fresh, 2 small (6" to 6-7/8" long) (remove)
* Brown Sugar, .25 cup, packed (remove)
* Homemade granola cereal, .5 cup (remove)
* Promise, Original Margarine, stick, 1 Tbsp, 4 serving (remove)
* Amaretto, 1 fl. oz., 4 serving (remove)
* Powdered Sugar, 1 cup, unsifted (remove)
* Cinnamon, ground, 1 tsp (remove)
Directions
Pierce the sweet potatoes 3 times each with a fork and microwave on high for 8 to 10 minutes until soft.
Preheat oven to 325 F. Scoop out the flesh from the sweet potatoes and put into a bowl. Add the vanilla and cinnamon and mash. Beat the sugar and eggs together and add to the potato mixture. Mix well.
Combine the dry ingredients of flour, salt, baking powder and add to the sweet potato mix. Stir only until combined.
In a separate bowl (or the one you just dumped the flour out of), mash the bananas, add the sugar and mix well. Stir in the granola.
Using a Bundt pan, spray with non-stick baking spray. Put 1/2 the sweet potato mix into the prepared pan. Top with the banana mix. Now add the rest of sweet potato mix. Bake 1 hour.
In a pan, melt the Promise Heart Healthy spread. Add the amaretto and bring to a boil. Remove from heat. Let cool and add the powdered sugar to the desired consistency. Pour over the cooled Bundt cake.
