    3 tablespoons olive oil
    1 medium onion chopped
    3 cloves garlic cubed
    1.2 pounds Italian turkey sausage- sliced
    2 cups lentils
    20 ounces cubed butternut squash
    4 cups of water


Heat olive oil in dutch oven and add onions and garlic. Cook until caramelized. Add the sausage and brown for 5-10 minutes. Add the squash and lentils and the water, bring to a simmer and cook for 90 minutes stirring occasionally. Add salt and pepper to taste.

    Very Good
    I liked this because it didn't have tomatoes! The squash makes it slightly sweet. - 11/9/09
