Introduction

This recipe came from the Ocean Spray website. I only substitute egg substitute for eggs, but it uses real butter and sugar. Ingredients

    1 cup sugar
    1/2 cup unsalted butter
    1 cup mashed banana
    1/4 cup nonfat milk
    1/2 cup egg substitute
    1 cup white flour
    1 cup whole wheat flour
    2 teaspoons baking powder
    1/2 cup pecans
    2/3 cup Craisins (sweetened, dried cranberries)

Directions

Preheat oven to 350 degrees. Grease an 8 1/2" x 4 1/2" x 2 1/2" loaf pan.

Mix sugar and butter together in a medium mixing bowl until completely blended. Add banana, milk and eggs, mixing well. Add dry ingredients, mixing until just moist. Stir in nuts and dried cranberries. Spread batter evenly in loaf pan.

Bake for 1 hour or until toothpick inserted into center of bread comes out clean. Remove from pan and cool.

Makes 1 loaf - serving size based on 12 slices per loaf.
