Ingredients

    1 pound pork tenderloin, trimmed and cut into thin strips
    1/4 tsp of salt
    1/8 tsp freshly ground black pepper
    2 tsp olive oil
    1.5 cups thinly sliced onion
    1 jalapeno pepper (seeded & chopped)
    1/2 cup low sodium chicken broth
    2 Roma tomatoes (seeded & chopped)
    3 tbsp cilantro (freshly chopped)
    2.5 tbsp lime juice
    2-3 cloves chopped garlic (optional)
    8 corn tortillas (6 inch)

Directions

Yield: 4 servings (2 tacos)

1. Heat a large nonstick skillet over medium-high heat. Add oil to pan. Add pork (sprinkle w/salt and pepper), and sauté 4 minutes or until browned.

2. Remove pork from pan; place in a bowl.

3. Add onion and jalapeño to pan; sauté 5 minutes or until tender. Add broth; reduce heat, and simmer 3-5 minutes (until broth is reduced to half).

4. Stir in tomato & garlic; simmer 3 more minutes.

5. Return pork and accumulated juices to pan. Stir in cilantro and lime juice; cook 2 minutes or until pork is done and broth is reduced.

6. Heat tortillas according to package directions. Spoon 1/2 cup pork mixture into each tortilla; roll up.
