Ingredients

    1 lb boneless, skinless chicken breast, cubed
    2 cups low-sodium light chicken broth
    1 Tbsp butter
    4 cloves garlic, chopped
    tarragon
    basil
    1 cup chopped celery (about 2 medium stalks)
    2/3 cup Heartsmart Bisquick mix
    3 Tbsp water

Directions

Melt butter and saute chopped garlic with 1 tsp each of basil and tarragon. When butter is melted, brown 1 lb cubed chicken breast. When all sides of chicken are seared, pour in chicken broth and cover, cooking on medium-high heat, adding 1/4 tsp each of pepper, salt, and curry powder. In a separate bowl, mix 2/3 cup of Bisquik mix and 3 Tbsp water (following directions on box for dumplings, but substituting water for milk). Once soup has simmered for 20-30 minutes, add celery and dumpling mix. Simmer for 5 minutes uncovered, then cover for an additional 5-10 minutes.

    Good
    My family enjoyed this very much, but found it to be a little to expensive for serving on a regular basis. As others said, the amount this recipe makes is really small. I doubled the recipe and still had to make it soupier than I wanted to have enough for the family. - 6/17/10
