Introduction
Makes 3 servings Makes 3 servingsNumber of Servings: 3
Ingredients
-
3 chicken breasts
3 cloves garlic
1/2 cup lemon juice
1/2 rosemary
2 tbsp salted butter
1 cup rice
2 cups water
Directions
Use a blender or food processor to mix the garlic, lemon juice, rosemary, and butter together. Use this mixture to marinate your chicken breasts in a plastic bag or covered bowl. We usually marinate for around 15 minutes. You can marinate longer for a stronger flavor.
Next, you want to cook the chicken on a grill outside. The butter smokes a little while cooking, which is why you wouldn't want to try to cook this indoors. In the meantime, cook your rice (2 cups water for one cup of rice, bring water to a boil, add rice and simmer covered for 20 minutes).
I haven't tried it, but I would assume you could substitute olive oil for butter if you'd like.
When chicken is thoroughly cooked (cooking time varies depending on your grill), serve over rice. Enjoy!
