Ingredients

* Egg, fresh, 8 medium
* *Flour, white, 1 cup
* Granulated Sugar, 1 cup
* Baking Powder, 1 tsp
* Orange Peel, 1 tbsp
* Pears, canned, 440 grams
* Cinnamon, ground, 1 tsp
* Vanilla Extract, 2 tsp
* Rum, 40 grams
* Fruit spirit, 40 grams
Directions
Makes 16 regular or aprox. 25 small servings.
Pour fruit spirit over pear halves. Separate yolks and whites of four eggs. Add sugar to yolks, vanilla extract and cinnamon, beat well. Make snow out of egg whites, add flour and baking powder. Stirr the white mixture in the yolk mixture. Put in a model, cut pear halves in thirds and sink them in the dough. Bake for 30 minutes at 150 degrees celsium. While the first layer is baking, melt chocolate plus half a cup of water, after melted, add rum and orange peel. Separate the remaining 4 eggs into yolks and whites, beat whites with a dash of salt until firm. After letting the chocolate with rum and orange peel cool down for a few minutes, mix in the yolks. Then carefully add the snow. Reduce the heat in the oven to 100 degrees celsium, put the chocolate dough on top of the cake and bake for additional 20 minutes -- check with a knife to see if it's baked through and through, if the dough sticks on the knife, put it in the oven for additional 20 minutes.
