Introduction
This is super easy to make and it's delicious. I originally found a salmon recipe made this way and it is also really awesome and good for you too. The lemon zest gives the fish a really nice lemony flavor. The brown sugar gives it a light sweet but still tart flavor. Try it, you'll like it. This is super easy to make and it's delicious. Ingredients

4 - 4 oz.frozen Tilapia fillets
1 whole lemon, zested, and juice
2 tsp packed light brown sugar
3 - 1 second sprays Pam olive oil cooking spray
Directions
Preheat oven to 350 degrees F.
Spray glass baking dish with Pam. Place frozen fillets in glass dish.
In a small bowl, mix the lemon juice with the brown sugar and stir until most of the sugar is dissolved. Pour over fillets, sprinkle the lemon zest over the fillets and bake for 30 minutes or until meat is white and flakes easily with fork.
Each fillet is one serving.
