Introduction

Ingredients

    1 small onion
    2-3 large bell peppers, sliced, or one bag frozen pepper strips
    1, 10 oz bag of frozen spinach
    1 pkg (8 oz) of your favorite chicken sausage
    1 jar of Trader Joe's organic marinara sauce
    1 box no-boil lasagna noodles, such as Barilla
    1, 15 oz container part-skim ricotta
    1, 12 oz container 1 percent fat cottage cheese
    1 oz grated fresh parmesan cheese

Directions

Heat 1 T olive oil in a large skillet. Brown chopped onion until translucent, then add chopped sausage and cook for 3-4 minutes. Add bell pepper and spinach and cook until spinach thaws and most of the water has evaporated. Add bottle of sauce and simmer.

Combine ricotta and cottage cheese and blend in a blender or with a stick blender.

Spread one-third of sauce mixture in the bottom of a 9X13 pan. Top with one-half of the noodles and one-half of the cheese mixture. Repeat the layers and top with last third of sauce and 1 oz grated parmesan.

Cover with foil and bake at 400 for 30-40 minutes or until bubbly.

Makes 12 servings.

Can be refrigerated up to 24 hours and baked as needed.
