Experiment night... Turned out great. Experiment night... Turned out great.
Number of Servings: 5

1 lb 93% lean Ground Beef
    1/4 c chopped Onion
    1 clove Garlic
    5 cups cooked Rice
    1 can Diced Tomatoes (about 1.75 c)
    1 cube Beef Bouillon
1 tbsp Jalapeno Juice (the liquid in a jar of jalapenos)
    1 c Boiling Water
    3/4 tsp Cumin
    1/2 tsp Oregano
    1/2 tsp Chili Powder

Cook rice in one pan. In another pan, cook together beef, onion, and garlic.

When done, mix together. Add diced tomatoes. Heat about 1 cup of water to boiling and mix with bouillon cube and jalapeno juice until well-mixed. Add to rice. Add cumin, oregano, and chili powder. Mix well. If necessary, add a bit more water so that the mixture is just slightly "soupy". Cook over low heat until thick. Add salt and pepper to taste.

Each serving is about two cups. I enjoyed mine with some cheese on top.
