Introduction
A nice, super easy cake I created after going apple picking and coming home with way too many apples. I really like this recipe because I almost always have all of the ingredients on hand. Ingredients

1 cup sugar
1/3 cup butter (room temp)
1 egg (or egg substitute)
1/4 cup applesauce
1/3 cup butter
1.5 tsp vanilla extract
1.5 cups flour (white/wheat)
1.5 tsp baking soda
1 pinch salt
1.5 tsp cinnamon
.5 tsp nutmeg
2 cups apples, peeled, cored and choped
1 cup nuts (pecans, walnuts, almonds)
Directions
1. Cream the butter and sugar, then add the remaining wet ingredients (egg, applesauce, extract).
2. Slowly begin to add the dry ingredients, mix well
3. Fold in apples and nuts (batter will be a bit thick)
4. Place batter into a 9 inch cake pan ([prepare with nonstick spray)
5. Place cake in a preheated 350* oven
6. Bake for 40 mins.
Notes - In my oven (which is not the best) the center is always a little undercooked which is what I like. If you do not, you may want to lower the cooking temp to 325*
