Introduction

Low fat cheese, whole wheat macaroni -- serve it up piping hot alongside your favorite veggie or maybe stir in some cooked ground turkey and you've got an AWESOME meal and the ULTIMATE comfort food! Ingredients

    8 oz whole wheat elbow macaroni
    2 tbsp flour
    1 tbsp butter
    3/4 to 1 cup milk (I use 1%)
    3.5 oz shredded low fat cheddar cheese
    1 ounce low fat cream cheese OR neufchatel
    Salt/Pepper to taste
    1 tsp Chili powder
    Hot sauce if you're brave!!

Directions

Boil a gallon of salted water. Once it's rolling, stir in your macaroni.
While that's going, melt the butter in a small saucepan. YES, you DO need butter. Oil just doesn't taste right, and margarine is evil.
Once the butter is foaming, whisk in the flour. Whisk until all of the flour is coated with the butter and the mixture turns a blond color. Add the chili powder.
Pour in the milk. Stir, and allow the milk to come to a boil. (If it doesn't boil, the sauce will never thicken and that's sad) Boil for 1 minute.
Remove the milk mixture from the heat and slowly stir in first the cream cheese, then the cheddar. Add it one small handful at a time, waiting until that's totally melted before you add more. DO NOT reheat the sauce, or the cheese will break apart. Ew.
When the mac is cooked, drain it, return to the pot, and pour the cheesey goodness over it. Add a little salt, some pepper, and a little hotsauce.

Serve and get happy!
