Ingredients

6 small lamb chops, de-boned and cut into bite sized pieces
2 T olive oil
1 jalapeno pepper, diced
1 small onion, diced
1 t salt
14 oz can of no salt added diced tomatoes
2 T curry powder (more or less to taste)
Directions
Heat a pan and add 1/2 T of the olive oil. Brown the lamb, seasoning with the salt. Remove lamb from pan and set aside.
Add the remaining oil to the pan, saute the onion until tender. Add the jalapeno and cook for an additional minute. Add the curry powder and cook, while stirring, for another minute.
Add the diced tomatoes and 1 c water and bring to a boil.
Add the lamb back to the pan. Cover and simmer over low heat for 30 minutes. Remove the cover and continue cooking till sauce reaches desired consistency.
Serve over rice or with naan.
