Introduction

Number of Servings: 6

Ingredients


    1 cup Onion
    1/2 cup Green Bell Pepper
    2 cup Frozen Spinach
    1 cup Sugar Snap Pea in Pod
    2 medium Tomato
    1/2 Cucumber with peel chopped
    1 Stock Celery sliced
    13.25 oz box Rotini Whole Wheat Pasta
    1 cup Pesto Sauce
    1 tbsp Olive oil

Directions

Make Pasta as directed on box. Heat large sauce pan with light film of olive oil.
Cook onion, green peppers, and spinach for a few minutes then add peas and tomato.
Peas warm and lightly soften but still have a fresh crunch. Reduce heat.
Add pesto sauce, cucumber and celery to warm. Add cooked pasta and toss.

Serves 6 adults
