Introduction

Mashed Sweet Potatoes baked with cream cheese. Very tasty side dish, and great for Thanksgiving time! Mashed Sweet Potatoes baked with cream cheese. Very tasty side dish, and great for Thanksgiving time!
Number of Servings: 4

Ingredients

    1 lb Sweet Potatoes (about 4 small/med)
    4oz 1/3 less fat Cream Cheese
    1 tsp Vanilla extract
    2 tbsp Pure Maple Syrup
    2 tbsp Brown Sugar
    1/4-1/2 tsp Ground Cinnamon (I just eyeball it)
    fresh ground pepper to taste

Directions

Preheat oven to 400. Cut and boil Sweet Potatoes until tender, and then mash. Add in remaining ingredients. In a 8x8 baking pan spray with cooking spray. Pour mixture into pan and spread evenly. Bake until browned about 20 mins.

Makes 4 side portion servings.

    I really liked this. I love sweet potatoes and cream cheese (or ricotta - yum!). I used stevia instead of brown sugar. I added a little ginger, red curry paste (I just recently discovered how good red curry paste tastes in sweet potatoes!), and oats on top. It was a little spongy. Needs more liquid. - 12/13/18
