Introduction

Ingredients

    1 pkg pasta (white is in the nutrition info, whole wheat works as well)
    1 can (15oz) pumpkin (not pie mix)
    2 tbsp flour
    1 tsp garlic powder
    1/2 tsp salt
    1/4 tsp ground nutmeg
    pinch cayenne pepper
    1 can (12 oz) Evaporated Fat Free Milk
    6 links Italian turkey sausage, cut into 1/4 inch slices
    1 pkg (10 oz) pre washed baby spinach
    1/4- 1/2 cup sliced mushrooms
    1 cup (8oz) shredded mozzarella cheese
    1/2 cup grated parmesan cheese

Directions

Cook turkey sausage, browning on all sides. Slice into 1/4 inch pieces, set aside on paper towel.
Preheat oven to 425. Spray a 4-quart baking dish with nonstick cooking spray. Prepare pasta. Reserve 1/2 cup pasta water and set aside for later use. Drain pasta & return to pot.
Combine pumpkin, flour, garlic powder, salt, nutmeg & cayenne pepper in medium skillet over medium heat. Slowly add evaporated milk, stirring until smooth. Cook, stirring occasionally, for 2-3 minutes or until mixture begins to thicken slightly. Pour over pasta in pot. Add sausage and reserved pasta water; stir well.
Spread half the pasta mixture into prepared baking dish. Top with spinach and mushrooms. Cover with remaining pasta mixture. Lightly spray a piece of foil with nonstick cooking spray. Cover pasta with foil, greased side down.
Bake for 20 minutes or until heated through. Combine mozzarella and parmesan cheeses in bowl. Remove foil; sprinkle with cheese mixture. Bake, uncovered, for an additional 5 minutes or until cheese is melted.
Makes 9 cup servings.
