Introduction

Ingredients

1lb frozen spinach, thawed
1/2 medium onion, finely minced
15oz ricotta cheese
2 eggs
1/2 cup fine bread crumbs
salt & pepper to taste
1/4 tsp nutmeg (optional, but yummy!)
Directions
Drain spinach well, squeeze out as much exess liquid as possible.
Mix together all ingredients. Refrigerate until mixture "sets up". Remove from refrigerator and roll into balls about the size of a large gumball.
These can be made in advance and frozen. Place the balls (uncooked) on a tray and cover with waxed paper. Freeze at least 2 hours. Place in bag and put in freezer until you want to bake them.
Put on baking sheet sprayed lightly with oil. Bake at 350 degrees for 20 minutes or until golden brown. If frozen, bake 30 minutes at 350 degrees
