Introduction

These are the best oatmeal and raisin cookies I've ever had. I can't remember where I got the recipe from but I make these at least once every two weeks. I make them bite size so that I can still enjoy them without worrying about the calories although it is extremely difficult to eat just one! Its definitely the maple syrup that makes these so amazing. These are the best oatmeal and raisin cookies I've ever had. Ingredients

    1/2 cup of butter
    1/2 cup of packed brown sugar
    1 tbs maple syrup
    1 large egg
    1 tsp vanilla extract
    1 cup all purpose flour
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 tsp cinnamon
    1 1/2 cups old fashioned rolled oats
    1 cup raisins

Directions

1. Preheat oven to Gas Mark 4/180C/350F.

2. In a mixing bowl, cream together butter, brown sugar and maple syrup until light and fluffy. Scrape down the sides of the bowl as needed. Add egg and vanilla, beating well.

3. In another bowl, sift together the flour, baking powder, baking soda, salt and cinnamon.

4. Add flour mixture to sugar mixture and mix until just incorporated.

5. Stir in oats and raisins.

6. Drop one teaspoon of dough into mounds on a parchment paper lined cookie sheet. Space mounds about an inch apart as they will spread. Bake until lightly golden brown around the edges - about 8-10 minutes.

7. Cool the cookies on the sheet for about five minutes before transferring to a wire rack to cool completely. Enjoy!
