Introduction

Kind of thrown together, this recipe uses Greek yogurt in place of sour cream. The potatoes came out kind of sticky, so feel free to add a little milk (or cream) for a smoother potato. Ingredients

    440 grams cooked, peeled potatoes
    100 grams Greek yogurt
    1 ounce neufachatel cheese
    1/4 cup low sodium chicken broth
    Dried chives, salt, pepper to taste (~1/2 T chives, 1/4 t salt, 1/4 t pepper included in nutritional info)

Directions

Cook potatoes (this is why I put prep time as so long; I wrapped them in aluminum foil and put them in the oven to bake. Once cooked through and cooked, I peeled and refrigerated. When I was ready to make the potatoes, I reheated them in the microwave until hot.)

Add yogurt, cheese, and chicken broth. Use electric mixer to mash potatoes before turning on medium to high speed and blending ingredients until fairly smooth. Add chives, salt, and pepper; continue mixing until blended throughout.

Serve hot. Makes 4 servings
