Number of Servings: 6

Ingredients

    4 medium yukon gold potatoes, sliced 1/2 inch thick
    3 large carrots sliced diagonally 1/4 inch thick
    2 zucchini sliced 3/4 inch thick
    1 lime, juiced
    3 tbsp grated onion
    1/4 cup olive oil
    1/2 tsp ground cumin
    1/2 tsp salt
    1/4 tsp ground black pepper

Directions

1) Bring a medium saucepan of water to a boil. Add potatoes and carrots and parboil for 10 minutes. Drain and set aside.
2)Light a grill or preheat the broiler.
3)In a large bowl, combine the olive oil, lime juice, onion, cumin, salt & pepper. Add the potatoes, carrots, zucchini slices and toss to coat. Let stand for up to 15 minutes.
4)Grill or broil vegetables for about 3 minutes per side, until nicely browned and tender. Serve hot.

    I did this ont he outside grill putting the veggies in Heavy Duty Aluminum Foil and cutting onion slices. I also used garlic salt instead of regular salt. came out okay but not spectacular - 3/15/07

    Fair Recipe. We couldn't taste the marinade on the veggies. But we added chicken breasts and enjoyed the zing on those! Also, the veggies were a little too dried out. Still, it was healthy, the kids ate it, and I'd make it again as a side. - 3/13/07
