Number of Servings: 8

Ingredients

    2 lbs Beef chuck, cut into 1"x1" cubes
    3 medium baking potatoes
    8 oz. bag of baby carrots
    4 celery stalks, chopped
    1 can pearl onions
    1 can whole tomatoes
    1/2 cup red wine
    2 beef buillon dissolved in 4 cups water
    3 cloves garlic
    2 T olive oil
    1/4 c flour
    salt and pepper to taste
    thyme to taste

Directions

Toss cubed beef in flour and brown over medium heat in large pot or dutch oven for about 15 mins. Add beef buillon, canned tomatoes, garlic, and thyme. Reduce heat to low and simmer for 1.5 hours. Add potatoes, celery, carrots, and onions. Simmer an additional 1.5 hours or until tender.

Makes 8 servings.
