Introduction

Based on the recipe from Giada's Everyday Italian Based on the recipe from Giada's Everyday Italian
Number of Servings: 4

Ingredients

    1 bag of Al Dente brand Whole Wheat blend + Flax fettucine
    1 c. of reserved pasta water
    zest of one lemon
    3 TB olive oil
    .5 cup part skim ricotta
    .5 lb. green beans
    1c. halved cherry tomatoes
    1 clove of garlic minced
    salt and pepper to taste

Directions

Makes 4-6 servings:

Cook pasta according to package directions. Drain and reserve 1c. of the pasta water. Add ricotta and stir to coat.

In a large pan heat olive oil. Add garlic and green beans and cook for 4 minutes. Add pasta water and cook an additional 4 minutes til tender.

Add fettucine to the mix and toss to coat. Add in the tomatoes, stir and transfer to a heat-proof bowl. Sprinkle with zest and parmesan
