Introduction

My 6-yr-old grandaughter loves this one! Not the lowest calorie item, but extremely tasty and give you a lot of potassium and half of your Vitamin A for the day. Ingredients

    10 oz fresh spinach leaves
    1/4 pound bacon, cooked and crumbled (I use Hormel bacon bits or pieces)
    ½ cup slivered almonds
    1 Granny Smith apple, chopped
    1/4 small red onion
    3 TBSP Cider Vinegar
    1/3 cup EVOO (Extra Virgin Olive Oil)
    ¼ cup sugar
    ¼ tsp salt

Directions

Toss spinach leaves, bacon, almonds and apple.

Dressing: blend onion, vinegar, oil, sugar, and salt.

Toss salad with dressing just before serving.

Makes 10 servings servings
