Introduction

Hearty bean soup Hearty bean soup
Number of Servings: 8

Ingredients

    1 pound of dry mixed beans and lentils
    1 pound Italian sausage (Turkey sausage ok)
    1 lg onion
    1 red bell pepper
    1 green bell pepper
    4 cloves of garlic
    1 12 oz can diced tomatoes
    1 6oz can tomato sauce
    1 tsp cayenne
    2 bay leaves
    1/4 tsp black pepper
    2 Tbsp olive oil
    6 cups chicken stock (homemade is way better)
    2 cups water

Directions

Soak beans overnight.
Saute garlic and vegetables in olive oil, then add all other ingredients into large pot and cook for 2-3 hours or until beans are soft. Adjust spices to taste.
