Introduction

Ingredients

4 C. Cake flour
1 C. granulated sugar
1 C. Splenda (or eliminate sugar and use 2 C. Splenda)
1/2 C. Unsweetened cocoa powder (kind used for baking)
1/2 tsp. salt
3 tsp. baking soda
1 1/2 C. regular mayonnaise (takes the place of eggs & oil)
2 C. cold water
2 tsp. vanilla extract
Directions
Preheat oven to 350 degrees
Sift together in a large mixing bowl all dry ingredients
Add the mayonnaise, water and vanilla. Stir until well blended.
Pour into a 9" x 13" baking pan. Tap pan on countertop to release air bubbles. Bake for 30 minutes or until center of cake is done. Test for doneness by inserting a toothpick in the center. If it comes out clean the cake is done. Do not overcook. If cake is pulling from the sides of the pan, it is overdone.
This cake is delicious served warm with a bit of smart balance spread on it or you can cool it and frost with vanilla frosting.
