Ingredients

    1 cups splenda sugar blend
    1/2 cup oil
    3 eggs
    1 1/2 cups canned or fresh pumpkin
    1/2 cup water
    1 1/2 cups flour
    1 1/2 cups wheat flour
    1 1/2 tsp baking powder
    1 tsp baking soda
    1/2 tsp ground cloves
    1 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1 tsp salt
    1 cups raisins
    1/2 cup chopped walnuts

    Frosting:
    2 cups powered sugar
    3 Tbs 1% milk
    1 Tbs light margarine melted
    1 tsp vanilla

Directions

In a large mixing bowl, beat sugar, oil, eggs, pumpkin and water. Combine flours, baking power, soda, spices and salt. Add to pumpkin mixture: blend well. Fold in raisins and walnuts. spoon into muffins tins lined with cupcake paper. Filling 3/4 full. Bake at 400 degrees for 15 minutes.
