Introduction

Ingredients

    2 Chicken Breast, no skin or bone. Bite size pieces.
    14 Frozen Shrimp.
    Lettuce (to use as wraps) about half a med head.
    1 C sliced onion and red pepper.
    6 oz Can of Bamboo shoots chopped
    6 oz can of Water chestnuts chopped
    3 Tbsp of Sherry
    2 Tbsp of Hoisen sauce
    1 Tbsp of Chuncky Peanut butter.
    1 Tbsp low sodium Soy sauce
    1 Tsp Hot chile sauce
    1 Tbsp ginger (fresh)
    1 Tsp sesame oil
    1/2 C of fresh Cilantro cut into small pieces.
    1 Cup cucmber cut into slivers

Directions

1. Combine, Bamboo shoots, waterchestnuts, sherry, hoisen sauce, peanut butter, soy sauce, hot chili sauce, sesame oil. Combine in medium dish and mix really well and set aside.
2. Spray wok with Pam, and cook chicken on Med/high. Once chicken is browned at onion, zuchinni, peppers and shrimp and shredded ginger. Cook on med high for about 5 minutes. Add set aside ingredients. Cook for another 3 to 5 minutes. Add sesame oil, mix in and let heat up for about 3 minutes. Remove from heat.
3. In a bowl remove lettuce to use as wraps and in another bowl the delicious cooked mixture and top with fresh cilantro. Place in a small bowl slivers of cucumber. If wanting to have a a meal you can serve with brown rice.
4. Enjoy the crunch lettuce and a fresh destinct flavours.
