Introduction

We love soup at our house in the winter so I try to come up with new ones. This one tastes like spanish rice with out the rice but you could add rice to the soup for a heartier soup too. Ingredients

    4 boneless pork chops ( approx 3 oz ea,)
    1 large onion chopped
    1 cup chopped celery
    2 16 oz cans Red kidney Beans
    2 16 oz cans Stewed tomatoes ( onion and peppers
    1 6 oz canned diced green chilies
    1 14 oz can chicken broth
    1 tbs cumin
    1 tbs Black pepper
    1 tbs onion powder
    1 tbs Garlic powder
    enough water to cover all ingredients should make about 6 quarts


Directions

In a large stew potsweat the onion and celery. cut raw pork chops into small cubes ( aprox 1 ") and brown lightly with onions and celery. add spices and green chilies. Add stewed tomatoes, kidney beans,chicken broth and water. Simmer as long as you like. graet for a weekend at home and you leave it simmering all day. Everyone can eat as they come and go. Makes about six quarts for 16 servings @ 1 1/2 cup servings
