A rather healthy dessert, and an great alternative to pumpkin pie. It is gluten-free and lactose-free. Ingredients

    1 cup pumpkin
    1 large egg
    1 tbsp molasses
    1/3 cup honey
    1/2 cup soy milk
    1 tsp vanilla extract
    1/2 tsp salt
    1/2 tsp ground cinnamon
    1/4 tsp ground nutmeg

Directions

Beat egg and combine all ingredients. Pour into 4 custard cups. Bake in a water bath at 325F for 40 minutes, the edges will be slightly darker and firmer than the center. The custard will still be soft in the center. For a firmer custard, add an additional egg. May be served warm or cold.

    I am a heavy diabetic so I may substitute the Molasses or Honey with No Calories Splenda----the Recipe sounds really delicious-----will love to make it. - 10/30/09
