Introduction

Found this at my local HEB, at the sample kitchen. They paired it with the Ghostly White Chili and oh boy are they good together. I tweaked a couple ingrediants so Enjoy! Ingredients

    2 packets Cornbread Mix
    1/2 cup Eggbeaters
    1 (12-15 oz) can Del Monte cream style corn, no salt added
    1 cup sour cream, reduced fat
    1 small can diced green chiles
    1 cup shredded Colby, reduced fat
    4 Tbs Country Crock Churnstyle butter, melted

Directions

Heat oven to 375 degrees F. Spray a 9x13 baking dish with non stick spray. In a bowl add eggbeaters, corn, sour cream and gree chiles and combine. Add cornbread mix and stir just until blended, add cheese and melted butter. Transfer mixture to baking dish and bake 25-30 minutes or until golden brown. I got 14 squares out of this dish.
