Ingredients

15 ounce can kidney beans, rinsed and drained
15 ounce can garbanzo beans, rinsed and drained
16 ounce can pinto beans, rinsed and drained
15 ounce can black bean soup (such as Trader Joe's Organic Black Bean Soup)
2 oz textured vegetable protein
6 oz can tomato paste
2 (14.5 ounce) cans diced tomatos including the liquid
15 ounce can whole kernel corn, drained
1 medium onion, chopped
1 green or red bell pepper, chopped
½ cup carrots, chopped
3 cloves garlic, chopped
2 teaspoons chili powder, or to taste
2 tablespoons fresh or dried basil
1 tablespoon fresh or dried parsley
1 tablespoon fresh or dried oregano
1 tablespoon cumin
1/2 cup water
Optional garnishes (not included in nutrition information): fresh cilantro, raw chopped onion, fat-free sour cream, and/or low-fat shredded cheese
Directions
1. Chop bell pepper, onion, carrots, and garlic.
2. Combine all ingredients in a slow cooker.
3. Cook for at least 2 hours on High.
4. Garnish and enjoy!
