Ingredients

    Sweet potato, 2 cup (about one large sweet potato)
    Extra Virgin Olive Oil, 2 tbsp
    Salt
    Black Pepper
    Balsamic Vinegar, 1/4 cup
    Honey, 1 tbsp
    Butter (Smart Balance Light Buttery Spread), 2 Tbsp

Directions

Sweet Potatoes:
Peel and slice into wedges. Put potatoes in oven pan or casserole dish, pour olive oil over potatoes, toss/mix until wedges are covered in oil, then spread potatoes out so they aren't overlapping. Bake at 350F for 40 minutes, or until wedges are soft (not hardened). Sprinkle desired amount of salt and pepper over cooked potatoes.

Sauce:
In a sauce pan, simmer balsamic vinegar and stir in honey. Stir for about 5 minutes. Melt butter and add to honey balsamic mix. Stir another 5 minutes until sauce has a warm syrup thickness. Drizzle over potatoes.
