Ingredients

    1.25 pounds 93% lean ground beef
    1 Cup chopped onion
    1 can diced tomatoes with green chilies
    1 package Knorr Lipton Fiesta Mexican Rice, prepared as directed
    1 can Campbell's Healthy Request Cream of Celery Soup
    6 oz Corn tortilla chips
    1 Cup Kraft 2% Mexican blend shredded cheese
    1 Package taco seasoning mix, low sodium (if available)

Directions

Preheat oven to 375 degrees

Prepare rice as directed on package

In large skillet, brown beef until cooked through; drain. Add chopped onion and taco seasoning; cook until onions are tender and clear. Add cream of celery soup, tomatoes and cooked rice to beef mixture.

In a 9x13 baking pan, layer 1/2 of the tortillas chips. Pour beef mixture over and layer with remaining 1/2 of the tortilla chips. Sprinkle cheese on top.

Bake for 15 minutes or until cheese is melted and mixture is bubbling.
