Introduction

This mash is really moreish, and makes a nice change from plain potatoes. This mash is really moreish, and makes a nice change from plain potatoes.
Number of Servings: 2

Ingredients

    2 x 200g potatoes
    125g packet frozen green peas
    1 tablespoons light sour cream
    1/8 cup grated parmesan
    black pepper, to season
    olive oil spray
    2 x 150g firm white fish fillets (such as snapper or hoki)
    2 cups salad greens
    1/4 red onion, sliced
    lemon wedges, to serve

Directions

Step 1 Boil potatoes for 15 minutes, or until tender, adding peas in the last 5 minutes of cooking. Drain and mash. Stir in sour cream and parmesan. Season with pepper. Keep warm.

Step 2 Spray a frying pan with oil and heat over a medium heat. Cook fillets 4–5 minutes each side.

Step 3 In a salad bowl, combine salad greens with onion.

Step 4 Divide mash among serving plates. Top with fish. Serve with salad and lemon wedges.
