Introduction

This pan-fried fish is great if you are watching your carb intake since the "breading" is actual almond meal. This pan-fried fish is great if you are watching your carb intake since the "breading" is actual almond meal.

Ingredients

    1lb Tilapia fillets - about 4 medium sized fillets
    1/2 Cup almond meal
    1/4 cup parmesan cheese, grated
    4T olive oil
    salt, pepper, garlic powder
    *any additional spices you like

Directions

Mix almond meal, parmesan cheese and spices in a large, shallow bowl.

Heat 3 Tbsp of olive oil in a large skillet on the stove top.
Use remainder of the olive oil to rub on tilapia fillets, then coat in the almond meal mixture.

Place the fillets in the skillet and cook for about 5 minutes on each side.

Recipe serves 4.
