This oatmeal I make a day or two ahead of a hectick time when time is very limited in the kitchen for breakfast. I make this and cover them and stick them in the fridge until I need them. I pull one out while the coffee is brewing and stick it in the microwave for a few minutes until warm and eat while getting myself and my son ready for the day. Ingredients

    1 cup old fashioned oats
    1 cup milk, non fat
    1 cup water
    1 tbs light butter
    1 can peaches in juice undraind
    1/4 tsp cinnamon
    1/2 tsp vanilla
    1/2 tsp maple flavoring

Directions

in sauce pan heat milk, water,butter, juice from peaches and a dash of salt if desired until boiling, stir in oats. cook for 2 min on high stiring constantly. Add peaches, cinnamon, vanilla, and maple flavoring. devide between 2 coringware dishes and bake at 375 for 35 min. let stand 5 min before eating.
