Ingredients

2-3 sweet potatoes, washed and cut into round slices about 0.25-inch thick (for "chips" cut thinner)
egg white
seasoning as desired
Directions
Preheat oven to 400.
Slice sweet potatoes into round pieces.
In a bowl, beat the egg white until it becomes frothy.
Dip the potato pieces into the egg white to lightly coat and put flat onto a non-stick cookie sheet (1 layer)
Sprinkle with Mrs. Dash or your favorite seasoning.
Bake at 400 for 10 minutes. Turn potatoes over, sprinkle with more seasoning, if desired and bake another 10 minutes or until desired doneness. (Mushy is another 5 - 10 minutes, firm is a bit shorter.)
These are also great with a little paremesan cheese sprinkled on top before the 2nd 10-minute bake.
Makes about 5 - 6 servings of 0.5 cup each.
