Introduction

This is rice pudding the way my grandmother used to make it. For me it is a comfort food. The original recipe called for 3/4 tsp salt, but I omit that. Ingredients

    1 cup uncooked Uncle Ben's converted rice
    4 1/2 cups water
    1 cup sugar
    1 T cornstarch
    2 cups light cream
    2 cups nonfat milk
    3 T butter
    1 1/2 t vanilla
    6 egg yolks, beaten
    1 cup raisins

Directions

Combine rice and water in a saucepan. Bring to a boil. Reduce heat, cover and simmer for 25 minutes, or until rice is very tender and most of the water has been absorbed.

Combine sugar and cornstarch. Add milk, cream, raisins, and sugar mixture to the rice. Heat to boiling. Boil for one minute, stirring constantly.

Remove from heat. Stir in butter and vanilla. Take out about 1 cup of the hot rice mixture and stir it into the beaten egg yolks in a bowl. (This prevents the yolks from solidifying.) Blend this with the remaining mixture in the saucepan.

Cook over medium heat, stirring frequently, until mixture reaches desired consistency.

Serve warm or chilled.

Makes 10 1-cup servings.
