Introduction

This is a low-fat, low-sugar version of my family's favorite banana bread. I have substituted canned pumpkin for the traditional shortening and Sugar Twin brand sweetener for the white sugar. Ingredients

    ~~~~~~~~~Batter~~~~~~~~~
    0.5 can Libby's Pure Pumpkin, 15 oz can
    1.33 cups Sugar Twin brand sweetener
    3 large Eggs
    2 cups mashed Banana (about 4 small)
    2 tsp Vanilla extract
    1.5 cups white Flour
    2 cups Whole Wheat Flour
    4 tspBaking Powder
    0.5 tsp Baking Soda
    0.5 tsp Morton Lite Salt
    1 cup chopped Walnuts

    0.5 cups Brown Sugar
    0.25 cups chopped walnuts

Directions

Cream together the first 5 ingredients in a large mixing bowl.

In a separate bowl, mix together the next 5 ingredients.

Add the dry ingredients into the large mixing bowl, combine well.

Add the chopped walnuts and continue mixing until a thick batter forms.

Split the batter between 3 loaf pans (about 1.5 - 1.75 cups in each). If using deeper loaf pans, you may only need 2.

Mix together the brown sugar and chopped walnuts, sprinkle evenly on top of the loaves.

Bake at 325 degrees for 50-60 minutes. Makes 3 loaves, 12 slices each (about 3/4 inch thick), for 36 total slices.
