Ingredients

I Can't Believe It's Not Butter, Fat-Free Spread, 4 tbsp
Applesauce, unsweetened, 1/4 cup
Altern No Calorie Sweetener (sucralose), 1 1/4 cup
Cocoa powder, 1/4 cup
Eggbeaters, 1/2 cup
Baking Powder, 1 tsp
Baking Soda, 1 tsp
Bob's Red Mill Barley Flour, 1/2 cup
8th Continent Light Vanilla Soy Milk, 1 cup
Apple Cider Vinegar, 2 tsp
Hershey’s Sugar Free Chocolate Chips, 1/4 cup
Jell-O Sugar-Free Fat-Free Chocolate Pudding, 1 Small Package
Cool Whip Free, 1 cup
Directions
Melt I Can't Believe It's Not Butter, cool, and add applesauce. Mix in cocoa powder,1 cup of the Altern, and Eggbeaters. Add Baking Powder and Baking Soda to Barley Flour, then integrate in mix. Add 1/4 cup of the Soy Milk and combine mix well to batter consistency. Stir in the vinegar and sprinkle chips on top once transferred to pan.
Cook batter in 8" pan sprayed with Pam or some similar spray. Cook for 18 minutes in a 300 degree oven.
In separate bowl, mix pudding mix, remaining 3/4 cup of soy milk, and remaining 1/4 cup of Altern. Then fold in Cool Whip.
When brownies are cool, frost with pudding mixture.
Cut into 16 equal 2"x2" pieces and enjoy!
PS: Topping also works as an excellent chocolate mousse!
