Introduction

My mom used to make this for special occasions. Technically this isn't a casserole as it is prepared in a large pot on the stove. It is delicious and we preferred this to traditional green bean casserole with mushroom soup. My mom used to make this for special occasions. Ingredients

    4 Cups Frozen Green Beans
    3 Med Zucchinis, sliced
    1 Med Onion, chopped
    3 Cloves Garlic, minced
    1 Cup of Parsley, chopped
    1 Cup of Crumbled Lowfat Feta Cheese
    2 8oz Cans Tomato Sauce, No salt added
    2 Tbsp Olive Oil
    1 tsp Oregano
    1 tsp Basil
    1 tsp Dill Weed
    1/2 tsp Pepper

Directions

Saute onions and garlic in olive oil until transparent.

Add zucchini, fresh or frozen green beans, parsley. and tomato sauce. Cook just until done, zucchini will be bright green. Approx. 10 mins.

Sprinkle Feta on top and stir in.
