Introduction

Ingredients

    STUFFING
    1 small apple, diced
    2 oz cornbread, cut into cubes
    1/2 onion, diced (or less)
    1 tsp salt-free poultry seasoning


    PORK
    * Low fat cream cheese (not fat free), softened 1.5 tbsp
    * Pork Tenderloin, 7 oz
    * Jalapeno jelly 1.5 tbsp

Directions

Combine cornbread stuffing items, place on the bottom of the pan. Divide the pork tenderloin in 1/2 lengthwise. Place 3/4 Tbsp of cream cheese into each. Roll up each piece and secure with a toothpick. Place on top of stuffing. Glaze the top of the pork rolls with the jalapeno jelly. I usually measure out the jelly microwave it for 10 seconds or less to make a "glaze" to place over the pork. Bake 350F for 30-45 minutes or until the pork is done.

OPTIONAL: if you like *hot* foods, mince a jalapeno pepper, mix into cream cheese and stuffing.
