Introduction

This is a family favorite for every holiday. I cut out butter and substituted low fat cream cheese and added more flavor. It was a hit at Thanksgiving this year. Ingredients

    1 T olive oil
    3 cloves garlic, minced
    3 packages frozen chopped spinach, cooked and drained well with paper towels
    8 oz. low fat cream cheese
    Juice of 2 lemons
    1 large can quartered artichoke hearts, drained
    1/2 C panko bread crumbs

Directions

Preheat oven to 375 degrees. Heat olive oil in a large skillet and saute garlic. Reduce heat and add cream cheese and allow to melt. Meanwhile, arrange artichoke hearts at the bottom of a casserole dish. Stir lemon juice and Parmesan cheese into cream cheese. Mix in spinach, and spread in casserole dish over artichoke hearts. Cover with panko crumbs. You may refrigerate for 2 days or freeze and thaw when ready to cook. Heat in oven until it bubbles and top browns, approx. 30 min.
